Ingredients/Components
- butter unsalted - 2 Tbsp
- shallots, finely chopped - 2 Tbsp
- mushrooms, sliced - 10 item
- chicken breasts, boned and skinned - 2 item
- prawns, shelled and deveined - 6 item
- fresh thyme, chopped
- parsley, chopped
- dry white wine - 3/4 c
- whipping cream - 1/2 c
- lemon juice - 1/2 tsp
- salt - 1/2 tsp
- white pepper - 1/2 tsp
- nutmeg - 1/2 tsp
- cooked rice - 1 c
How to make chicken supreme:
Season chicken breasts with salt and pepper. Melt butter in a skillet. Add shallots, mushrooms, thyme and chicken breasts. Sprinkle parsley and nutmeg over chicken. Add wine and lemon juice; simmer, covered, for about 10 minutes. Remove chicken to serving dish. Add prawns to broth; cook about 1 minute, or until done. Remove prawns to serving dish.Add heavy cream to stock; reduce heat for about 2 or 3 minutes. Pour sauce over chicken and prawns. Garnish with chopped parsley. Serve over rice. Makes 2 servings.
