Ingredients/Components

  • canned tomatoes - 4 c
  • chicken stock - 2 c
  • chopped parsley - 1 Tbsp
  • large onion, cut into quarters - 1 item
  • clove garlic, peeled and crushed - 1 item
  • Worcestershire sauce - 1 Tbsp
  • salt - 2 tsp
  • good pinch basil - 1 item
  • pinch thyme - 1 item
  • fresh mushrooms - 1 lb
  • cooked chicken meat - 4 c
  • flour - 2 Tbsp
  • light cream - 1 c
  • grated Cheddar cheese - 1/4 lb
  • salt and pepper to taste - 1 item
  • spaghetti - 1/2 lb
  • cheese - 1 item

How to make chicken spaghetti:

Simmer canned tomatoes and chicken stock until liquid is reduced by one-half. Season with chopped parsley, onion, garlic, Worcestershire sauce, salt, basil and thyme.

Slice and saute fresh mushrooms in a little butter until golden. Drain. Retain mushroom drippings. Add mushrooms to sauce along with cooked chicken meat. Stir flour into mushroom drippings. Add cream and Cheddar cheese. Heat and stir until thickened. Season to taste with salt and pepper. Add to tomato and chicken mixture. Cook spaghetti. Toss with sauce. Place in casserole dish. Top with cheese and bake at 350° for 45 minutes. Sauce can be made and frozen. Serves 8.
