Chicken satay with peanut sauce
Ingredients/Components
- brown sugar - 1 Tbsp
- water
- oil - 1 Tbsp
- ginger - 1/2 tsp
- lemon juice - 2 Tbsp
- dry mustard - 1/2 tsp
- ground red pepper - 1 item
- soy sauce - 1/4 c
- garlic clove, minced - 1 item
- cumin - 1/2 tsp
- coriander - 1/2 tsp
- clove minced garlic - 1 item
- unsweetened peanut butter - 1/3 c
- 1-inch strips chicken breast - 2 lb
How to make chicken satay with peanut sauce:
Peanut Sauce:1/2 c. water1/3 c. unsweetened peanut butter1 clove minced garlic1 1/2 Tbsp. soy sauce1 Tbsp. brown sugar1 tsp. lemon juice ground red pepper Combine marinade ingredients. Add the chicken strips and marinate for one hour at room temperature in a covered dish. Thread chicken on 6 (12-inch long) skewers. Cook on an uncovered grill, about 6 to 8 minutes, turning once.Meanwhile, in a small saucepan, combine water, peanut butter and garlic. Cook over medium heat (stirring constantly). When mixture boils, add other ingredients. Serve warm as an accompaniment to Chicken Satay and rice.
Note: Sirloin can also be used.
