Ingredients/Components
- sugar - 2 Tbsp
- brown sugar - 3 Tbsp
- lemon juice - 2 Tbsp
- smooth peanut butter
- salad oil - 1/2 c
- cloves garlic, minced - 4 item
- soy sauce - 1/2 c
- curry powder - 2 Tbsp
- cloves garlic - 2 item
- ground cumin - 3/4 tsp
- coconut milk - 12 oz
- to 6 drops Tabasco - 5 item
- large onion, cut in fourths - 1 item
- boneless, skinless chicken breast into 1 1/2-inch cubes - 3 4
How to make chicken satay:
Peanut Sauce:3/4 c. smooth peanut butter1 large onion, cut in fourths2 cloves garlic5 to 6 drops Tabasco2 Tbsp. salad oil3/4 tsp. ground cumin12 oz. coconut milk3 Tbsp. brown sugar2 Tbsp. lemon juice2 Tbsp. soy sauce Mix first 5 ingredients in a bowl. Stir in chicken and chill for a minimum of 4 hours and maximum of 48 hours.With motor running on food processor, drop garlic through feed tube. Place peanut butter, onion and Tabasco in a bowl. Blend until smooth. Heat oil in large pan. Add sauce and cumin. Cook on low 5 minutes. Stir in remaining ingredients and cook for 15 minutes below simmer. Serve hot. Place chicken on skewers; grill 8 to 10 minutes. Serve over rice with peanut butter sauce and pineapple chunks.
