Chicken satay



  • salt - 1/2 tsp
  • crunchy peanut butter - 1/2 c
  • lime juice - 1/4 c
  • curry powder - 2 Tbsp
  • small onion, finely chopped - 1 item
  • garlic cloves - 2 item
  • grated fresh ginger - 2 tsp
  • garlic clove, crushed - 1 item
  • dark soy sauce - 2 Tbsp
  • coconut cream - 1/4 c
  • Combine the marinade ingredients and pour over the chicken
  • dried chili flakes - 1/4 tsp
  • clear honey - 1 tsp
  • Stir in all the remaining ingredients and heat gently until boiling
  • cilantro sprigs, to garnish - 1 item
  • lime wedges, to serve with - 1 item

How to make chicken satay:

Cut the chicken breasts on the diagonal into very thin strips and place in a shallow dish. Combine the marinade ingredients and pour over the chicken. Stir once, cover, and leave to marinate overnight.Peanut Sauce:2 Tbsp. peanut oil1 garlic clove, crushed1/2 c. crunchy peanut butter1/4 tsp. dried chili flakes2 Tbsp. dark soy sauce2 Tbsp. lime juice1 tsp. clear honey1/4 c. coconut cream Heat the peanut oil in a small pan and gently saut? the garlic until soft (2-3 minutes). Stir in all the remaining ingredients and heat gently until boiling. Pour into a small serving dish.Chicken:1 lb. boneless skinless chicken breast cilantro sprigs, to garnish lime wedges, to serve with Lift the chicken out of the marinade and pat dry. Thread the chicken onto 8 presoaked bamboo skewers, zig-zagging back and forth as you go. Cook under a preheated broiler for 2-3 minutes on each side until cooked. Garnished with cilantro sprigs and serve with peanut sauce and lime wedges.Preparation time - 20 minutes, plus marinating. Cooking time - 4-6 minutes.
