Chicken salad
Ingredients/Components
- cold water - 1/2 c
- chopped celery - 1 c
- mayonnaise - 3 Tbsp
- capers - 1 Tbsp
- envelope Knox gelatine - 1 item
- chicken, chopped
- chicken broth, strained - 1/2 c
- chopped pickle candied dill - 2 Tbsp
How to make chicken salad:
Soak gelatine in cold water. Dissolve gelatine in hot chicken broth. Set aside to cool.Mix chicken, preferably white meat, with celery, pickle and capers. Pour gelatine broth over salad and mix thoroughly. Add mayonnaise and blend.
Peel and scoop out 6 small tomatoes; rub inside with lemon juice. Fill with salad, serve on lettuce leaf and garnish with 1/2 yolk of hard-boiled egg that has been sprinkled with chopped parsley, mayonnaise and capers.
