Chicken quesadillas
Ingredients/Components
- salt - 1/4 tsp
- vegetable oil - 1 tsp
- 5 oz
- chopped green pepper
- ground pepper - 1/4 tsp
- cumin - 2 tsp
- minced fresh cilantro - 1/4 c
- shredded reduced-fat Monterey Jack cheese - 3/4 c
- minced purple onion - 1 c
- cooked chicken breast - 2 c
- 8-inch fat-free flour tortillas - 8 item
- butter flavored cooking spray - 1 item
- fresh cilantro sprigs optional - 1 item
How to make chicken quesadillas:
Place oil in a large nonstick skillet over medium-high heat until hot. Add chopped pepper and onion. Cook 3 minutes, stirring often. Add cumin and cook 1 minute, stirring often. Add chicken and tomato. Cook 3 minutes, stirring often. Stir in minced cilantro, salt and ground pepper.Place about 1/2 cup chicken mixture on half of each tortilla. Sprinkle cheese evenly over chicken mixture on tortillas; fold tortillas in half. Coat a large nonstick skillet with cooking spray. Place over medium-high heat until hot. Add 2 filled tortillas. Cook 30 seconds on each side or until lightly browned. Set aside and keep warm. Repeat procedure with remaining 6 tortillas. Garnish with cilantro sprigs, if desired. Serve immediately. Serves 8.
