Ingredients/Components

  • eggs - 2 item
  • butter or margarine - 1/4 c
  • salt - 1/4 tsp
  • boiling water - 1/2 c
  • all-purpose flour - 1/2 c
  • mayonnaise - 1/3 c
  • seasoned salt - 1/2 tsp
  • finely chopped green pepper - 1/4 c
  • white wine - 2 Tbsp
  • freshly ground black pepper - 1/4 tsp
  • grated Swiss cheese - 2/3 c
  • finely chopped cooked chicken - 1 c
  • chopped almonds - 1/2 c
  • finely chopped tomato - 1/4 c

How to make chicken puffs:

Preheat oven to 400°. In a small saucepan over medium-low heat, melt butter in water. Add flour and salt, stirring until mixture forms a ball. Remove from heat and allow to cool slightly. Add eggs and beat vigorously until smooth. Stir in cheese. Drop dough by heaping teaspoonfuls onto a greased baking sheet. Bake for 20 minutes or until golden brown. Remove puffs from oven; cool and split. Combine remaining ingredients, adding more mayonnaise if needed to moisten. Fill each puff with a heaping teaspoonful of chicken mixture. Yield: approximately 2 dozen puffs.
