Chicken piccata
Ingredients/Components
- salt - 1/4 tsp
- flour - 1 Tbsp
- margarine - 4 Tbsp
- lemon juice - 3 Tbsp
- pepper to taste - 1 item
- chopped parsley - 1 Tbsp
- white wine - 1/4 c
- lemon slices - 1 item
- small whole boneless chicken breasts, cut in half - 4 item
How to make chicken piccata:
Combine flour, salt, and pepper. Coat chicken with flour mixture. In large skillet, melt 2 tablespoons margarine. Brown chicken until chicken is cooked through. Remove to a warm platter. Melt remaining margarine in skillet. Stir in wine and lemon juice, scraping up bits from bottom of pan. Stir in parsley. Spoon sauce over chicken. Serve with lemon slices.
