Chicken pasta salad



  • salt - 1 tsp
  • red wine vinegar - 1/3 c
  • olive oil - 1/3 c
  • fresh ground pepper - 1/4 tsp
  • cooked pasta - 1 pkg
  • olives optional - 1/2 c
  • cooked chicken beasts, shredded - 2 item
  • or 4 roasted red peppers, in strips - 3 item
  • Dressing:4 to 6 cloves minced garlic
  • shredded fresh basil or 1 Tbsp - 1/2 c

How to make chicken pasta salad:

Dressing:4 to 6 cloves minced garlic1 tsp. salt1/4 tsp. fresh ground pepper1/3 c. red wine vinegar1/3 c. olive oil1/2 c. shredded fresh basil or 1 Tbsp. dry Mix garlic, salt, pepper and vinegar, then add oil. Pour dressing over other ingredients. Toss, let sit at room temperature 2 hours before serving or chill overnight.

Serve with fresh Parmesan cheese and/or roasted pine nuts.
