Ingredients/Components

  • salt and pepper - 1 item
  • grated parmesan cheese - 1 item
  • clove garlic, peeled and crushed - 1 item
  • chopped Vidalia onions - 1/2 c
  • bow tie pasta - 8 oz
  • chicken breasts, cooked, deboned and chopped - 2 item
  • each green, yellow and red bell pepper, coarsely chopped - 1 item
  • bunch fresh broccoli flowerets - 1 item
  • fresh sweet basil leaves - 1/4 c
  • extra light olive oil, divided - 1/4 c

How to make chicken pasta:

In a large pot, cook pasta according to package directions, drain. Add approximately 2 tbsp. olive oil and chopped basil leaves to pasta and toss. Set aside.

In large frying pan, saut?© green pepper, onion and garlic in remaining olive oil over medium heat just until onions begin to turn clear. Do not allow garlic to brown. Add red, yellow peppers, broccoli and heat just long enough to cook broccoli slightly. Add chopped chicken.

Combine pasta and vegetable-chicken mixture, tossing lightly. Salt and pepper to taste. Serve with grated parmesan cheese.
