Chicken parmigiana
Ingredients/Components
- egg - 1 item
- grated Parmesan cheese - 1/2 c
- olive oil - 1/3 c
- minced parsley - 2 Tbsp
- jar spaghetti sauce - 1 oz
- boneless chicken breasts - 6 item
- clove garlic, crushed - 1 item
- oregano, crushed - 1 tsp
- seasoned bread crumbs - 1/2 c
- Mozzarella cheese, cut in 6 slices - 1 oz
- hot, cooked pasta ziti or penne - 3 c
How to make chicken parmigiana:
Preheat oven to 350°. In shallow bowl, combine bread crumbs and 1/4 cup Parmesan cheese. Place egg in another bowl and beat. Dip chicken in egg and coat with bread crumbs. Heat olive oil in large skillet over medium-high heat. Add chicken and saute 5 minutes on each side. Remove to plate.In small bowl, combine spaghetti sauce, oregano and garlic. Pour into 13 x 9-inch pan. Place chicken over sauce mixture. Cover with aluminum foil and bake 40 minutes. Remove foil and top with Mozzarella cheese. Sprinkle with remaining Parmesan. Bake 10 minutes longer or until cheese is melted.
To Serve: Toss hot, cooked pasta with parsley. Arrange chicken around pasta. Serves 6.
