Chicken parmigiana
Ingredients/Components
- eggs - 2 item
- butter or margarine - 1 Tbsp
- salt - 1 tsp
- oil - 1/2 c
- garlic powder - 1/8 tsp
- pepper - 1/8 tsp
- grated Parmesan cheese - 1/2 c
- can tomato sauce - 1 oz
- basil - 1/4 tsp
- chicken breast fillets - 6 item
- crushed Club crackers - 3/4 c
- Mozzarella cheese, thinly sliced, cut into triangles - 8 oz
How to make chicken parmigiana:
Preheat oven to 350°. Beat eggs with salt and pepper in bowl. Rinse chicken and pat dry. Dip into egg mixture; roll in cracker crumbs, coating well. Brown in hot oil in skillet; drain chicken and skillet well. Arrange chicken in lightly greased 9 x 13-inch baking dish. Bring tomato sauce, basil and garlic powder to a boil in skillet. Simmer for 10 minutes or until thickened. Stir in butter. Pour over chicken; sprinkle with Parmesan cheese. Bake, covered, for 30 minutes. Arrange Mozzarella slices over top.
