Ingredients/Components

  • butter - 6 Tbsp
  • onion, chopped - 1/2 c
  • cloves garlic, minced - 2 item
  • thyme - 1 tsp
  • celery tops - 1/2 c
  • peppercorns - 10 item
  • bay leaves - 2 item
  • chicken livers - 1 lb
  • water
  • salt - 1/2 tsp
  • pinch of pepper - 1 item
  • allspice - 1/2 tsp
  • heavy cream - 1/4 c

How to make chicken liver pate:

Melt butter in a large skillet; add onion, garlic and thyme. Saute over medium heat until onion is tender (about 10 minutes). Transfer to bowl and set aside.

To same skillet, add celery tops, peppercorns, bay leaves and water. Add chicken livers and simmer 10 minutes. (Livers will be slightly pink inside.) Remove livers from water and place in blender or food processor, along with the onion mixture, water, salt, pepper and allspice. Blend until smooth.

Transfer mixture to a medium bowl and allow to cool for 5 minutes, then blend in cream. Transfer to 2-cup bowl or crock. Cover; refrigerate.
