Chicken liver pate
Ingredients/Components
- salt - 1 tsp
- water - 1 c
- clove garlic - 1 item
- thyme leaves - 1/4 tsp
- freshly ground pepper to taste - 1 item
- thinly sliced onion - 2/3 c
- capers - 1 item
- bay leaves - 2 item
- chicken livers - 1 lb
- butter 3 sticks
- cognac or Scotch whiskey - 2 Tbsp
How to make chicken liver pate:
Place livers, onion, garlic, bay leaves, thyme, water and salt in saucepan. Bring to boil; cover and cook at bare simmer for 7 to 8 minutes. Remove from heat; let mixture sit about 5 minutes. Take out solids with slotted spoon and put into food processor. Process, adding butter piece by piece. Add pepper and liquor and process 2 more minutes until mixture is completely smooth.
