Ingredients/Components

  • salt - 1 tsp
  • water - 1 c
  • clove garlic - 1 item
  • thyme leaves - 1/4 tsp
  • freshly ground pepper to taste - 1 item
  • thinly sliced onion - 2/3 c
  • capers - 1 item
  • bay leaves - 2 item
  • chicken livers - 1 lb
  • butter 3 sticks
  • cognac or Scotch whiskey - 2 Tbsp

How to make chicken liver pate:

Place livers, onion, garlic, bay leaves, thyme, water and salt in saucepan. Bring to boil; cover and cook at bare simmer for 7 to 8 minutes. Remove from heat; let mixture sit about 5 minutes. Take out solids with slotted spoon and put into food processor. Process, adding butter piece by piece. Add pepper and liquor and process 2 more minutes until mixture is completely smooth. Refrigerate until firm. Garnish with capers.
