Chicken kiev
Ingredients/Components
- flour - 1/4 c
- water - 1 Tbsp
- cooking oil - 1 Tbsp
- margarine - 1 Tbsp
- beaten egg - 1 item
- clove garlic, minced - 1 item
- fine dry bread crumbs - 1/4 c
- parsley - 1 Tbsp
- chopped green onion - 1 Tbsp
- large, skinless, boneless chicken breasts - 4 item
- stick margarine, chilled - 1/2 a
How to make chicken kiev:
Place each breast between 2 pieces of clear plastic wrap. Working from the center to the edges, pound with flat side of meat mallet to 1/4-inch thickness. Remove plastic wrap. Sprinkle with salt and pepper.Combine onion, parsley and garlic. Sprinkle on chicken. Cut chilled margarine into 4 slices. Place one in center of each breast. Fold in sides, roll up jelly roll style, pressing edges to seal.
Stir together egg and water. Coat breast rolls with flour; dip into egg mixture. Coat with crumbs. Cover; chill 1 to 24 hours.
In skillet, melt margarine and oil. Add chilled chicken rolls. Cook over medium-high heat about 5 minutes or until golden brown, turning to brown all sides. Transfer to baking dish. Bake at 400° for 15 to 18 minutes. Spoon drippings over rolls.
