Ingredients/Components

  • margarine or butter - 2 Tbsp
  • pepper - 1/4 tsp
  • garlic salt - 1/2 tsp
  • chopped onion - 1/4 c
  • chopped celery - 1/3 c
  • chicken broth
  • can tomatoes, cut up - 1 1/2
  • long grain rice - 2/3 c
  • bay leaf - 1 item
  • chopped green pepper - 1/4 c
  • cubed, cooked chicken or turkey - 2 c
  • bottled hot pepper sauce - 1/4 1/2
  • dried basil or thyme - 1 tsp

How to make chicken jambalaya:

In a large skillet, cook onion, celery and green pepper in margarine or butter until tender. Stir in undrained tomatoes, chicken broth, rice, basil or thyme, garlic salt or pepper, hot pepper sauce and bay leaf. Bring to a boil. Reduce heat; cover and simmer about 20 minutes or until rice is tender. Stir in chicken or turkey. Cook until heated through. Discard bay leaf.
