Ingredients/Components

  • salt - 1/4 tsp
  • margarine - 1/4 c
  • lemon juice - 1 Tbsp
  • pepper - 1/8 tsp
  • grated Parmesan cheese - 1/3 c
  • parsley - 1 item
  • sliced mushrooms - 1 c
  • white wine - 2 Tbsp
  • lemon wedges - 1 item
  • grated lemon peel - 1/2 tsp
  • chicken breasts, boned and skinned - 4 item
  • light cream table cream - 1 c

How to make chicken in lemon sauce:

In large frying pan, melt margarine over medium heat. Add chicken and saute about 10 minutes or until chicken is brown and fork can be inserted with ease. Remove chicken to a dish appropriate for broiling in oven.

Drain margarine from frying pan and add wine, lemon peel and lemon juice. Cook one minute; add salt and pepper. Pour in cream, stirring constantly, and heat, but do not boil.

Pour sauce over chicken. Sprinkle with Parmesan cheese and mushrooms. Set oven temperature at "broil" with rack about 6 inches from heat. Broil until chicken is lightly browned. Garnish with lemon wedges and parsley.
