Chicken gumbo
Ingredients/Components
- butter or margarine - 3 Tbsp
- scallions - 1/2 c
- diced, cooked chicken, cut up - 3 c
- can stewed tomatoes - 16 oz
- chicken broth
- pkg - 10 oz
- chopped parsley - 1/4 c
- lemon juice - 2 Tbsp
- diced celery - 1/2 c
- diced green pepper - 1/4 c
- garlic clove, minced - 1 item
- thyme - 1/2 tsp
- bay leaves - 3 item
- file powder - 1 2
- drops hot pepper sauce - 3 item
- uncooked regular rice - 1/4 c
How to make chicken gumbo:
Melt butter in large saucepan over medium heat. Cook onion, celery and green pepper until tender. Add remaining ingredients, except rice. Bring to a boil. Stir in rice. Reduce heat. Simmer uncovered for 20 minutes or until rice is tender. Makes approximately 6 (1 cup) servings.Recipe categories: Main dish, Gumbo, Stew.
