Ingredients/Components

  • butter or margarine - 3 Tbsp
  • scallions - 1/2 c
  • diced, cooked chicken, cut up - 3 c
  • can stewed tomatoes - 16 oz
  • chicken broth
  • pkg - 10 oz
  • chopped parsley - 1/4 c
  • lemon juice - 2 Tbsp
  • diced celery - 1/2 c
  • diced green pepper - 1/4 c
  • garlic clove, minced - 1 item
  • thyme - 1/2 tsp
  • bay leaves - 3 item
  • file powder - 1 2
  • drops hot pepper sauce - 3 item
  • uncooked regular rice - 1/4 c

How to make chicken gumbo:

Melt butter in large saucepan over medium heat. Cook onion, celery and green pepper until tender. Add remaining ingredients, except rice. Bring to a boil. Stir in rice. Reduce heat. Simmer uncovered for 20 minutes or until rice is tender. Makes approximately 6 (1 cup) servings.
