Chicken gumbo
Ingredients/Components

- water - 8 c
- pepper - 1 tsp
- chopped onion - 3/4 c
- chopped celery - 1/4 c
- okra - 10 oz
- uncooked rice - 1/2 c
- chicken breast - 2 to
- large can tomatoes - 1 item
- mixed vegetables
- celery tops, chopped - 1 item
- seasonings of choice optional - 1 item
How to make chicken gumbo:
Place chicken in large pot with water and celery tops. Boil until chicken is tender. Remove chicken and set aside until cool. Debone and chop chicken. Add vegetables, celery, onion, okra, corn, lima beans, mixed vegetables and tomatoes to broth; boil approximately 30 to 40 minutes stirring occasionally. Add chicken and rice and boil 30 minutes more. May add water if needed.Recipe categories: Main dish, Gumbo, Stew.
