Chicken fried rice
Ingredients/Components
- salad oil - 1/3 c
- beaten eggs - 2 item
- chopped onion - 1/2 c
- soy sauce - 1 Tbsp
- chicken broth
- celery - 1/4 c
- green pepper - 1/4 c
- cooked, diced chicken - 1 c
- uncooked long-grain rice - 1 c
- shredded lettuce or red cabbage - 1 c
How to make chicken fried rice:
Cook chicken. Combine chicken and soy sauce. Sprinkle with 1/2 teaspoon salt. Let sit for 15 minutes. Cook rice in hot oil. Reduce heat. Add chicken and broth. Simmer, covered, 20 to 25 minutes. Stir in onions, green peppers and celery. Cook, uncovered. Push rice to side. Add eggs and cook until almost set. Blend into rice.
