Chicken fricassee with chive dumplings
Ingredients/Components
- milk - 1 item
- salt - 2 tsp
- flour - 1 c
- water - 1 c
- baking powder - 2 tsp
- shortening - 3 Tbsp
- paprika - 2 tsp
- pepper - 1/2 tsp
- chives - 3 Tbsp
- stewing chicken, cut up - 4 to
- shortening or salad oil - 1 item
How to make chicken fricassee with chive dumplings:
Chive Dumplings:1 1/2 c. flour2 tsp. baking powder3/4 tsp. salt3 Tbsp. shortening3/4 c. milk3 Tbsp. chives Mix 1 cup flour, salt, pepper and paprika. Coat chicken. Heat shortening in skillet; brown chicken. Drain fat; reserve. To skillet, add water (onions optional). Cover and cook chicken 2 1/2 to 3 1/2 hours, adding water, if necessary.Remove chicken. Pour off liquid in skillet; reserve. To make gravy, heat 3 tablespoons reserved fat in skillet. Blend 3 tablespoons flour. Keep stirring. Remove from heat. Add enough milk to reserved liquid to make 3 cups. Pour in skillet and heat until boiling. Return chicken to gravy.
Drop dumplings in by spoonfuls on hot chicken. Cook, uncovered, 10 minutes and covered, 20 minutes.
Chive Dumplings: Cut in shortening to other ingredients and stir in milk.
