Ingredients/Components

  • skinned fryer chicken parts - 4 5
  • m - 1 tsp
  • cloves minced garlic - 5 item
  • onion, chopped - 1 item
  • chopped green bell pepper - 1/2 item
  • cans tomato sauce - 2 oz
  • bay leaves - 4 item
  • cumin seed - 1 tsp
  • dried leaf oregano
  • raisins - 1 c
  • stuffed green olives - 1 c
  • cider vinegar - 1 tsp

How to make chicken fricassee cuban style:

Place chicken parts in a large deep skillet. Add m.s.g., garlic, onion, green pepper, tomato sauce, bay leaves, cumin, oregano, raisins, olives and vinegar. Cover and bring to a boil. Turn heat down and simmer 1 hour, turning chicken occasionally. Remove chicken to a platter and serve the sauce over rice or noodles.
