Chicken fajitas
Ingredients/Components
- lime juice - 1/4 c
- garlic clove, minced - 1 item
- chili powder - 1 tsp
- ground cumin - 1/2 tsp
- whole skinless boneless chicken breasts - 2 item
- medium onion, cut into thin wedges - 1 item
- medium red pepper, cut in strips - 1/2 item
- medium yellow and green pepper, cut in strips - 1/2 item
- salsa - 1/2 c
- flour tortillas - 12 item
- shredded Cheddar on Monterey Jack cheese - 6 oz
How to make chicken fajitas:
In a small bowl, combine first four ingredients. Add chicken. Marinate 15 minutes.In skillet, cook onion, chicken and marinade for 3 minutes until chicken is no longer pink. Add peppers. Saute 3 minutes. Stir in salsa. Divide mixture among tortillas and top with cheese. Roll up and serve.
