Ingredients/Components
- onion, chopped - 1 item
- corn tortillas - 1 pkg
- broth
- cans cream of mushroom soup - 2 item
- can green chili salsa - 1 1/2
- can chili with or without beans - 1 item
- small chicken, cooked and deboned * - 1 item
How to make chicken enchiladas:
*I cook the chicken in crock-pot on high for 4 hours. No water added. Or cook overnight if chicken is frozen.Bring broth, salsa, chili, soup and onion to boil. Remove from heat. Add tortillas torn up in bite-size pieces and chicken torn in pieces. Stir together. Pour into 9 x 13-inch casserole. Bake at 350° uncovered 15 minutes and 30 minutes covered.
