Chicken enchiladas
Ingredients/Components
- sour cream - 8 oz
- grated Cheddar cheese - 2 c
- small onion - 1 item
- cans cream of chicken soup - 2 item
- corn tortillas - 12 item
- cubed chicken or turkey - 2 c
How to make chicken enchiladas:
Grease a 13 x 9 x 2-inch baking pan. Saute the onion in butter. Add soup and chicken; bring to a boil. Add sour cream and stir until well blended. Dip tortillas in boiling water or chicken broth. Fill tortillas with one tablespoon of the chicken mixture and a little cheese. Then roll up. Pour remaining filling over all and sprinkle with the remaining cheese.
