Chicken enchiladas
Ingredients/Components
- cream of chicken soup - 1 c
- can Ro-Tel - 1 item
- cream of mushroom soup - 1 c
- Velveeta - 1 lb
- flour tortilla shells - 1 pkg
- chicken, boiled - 1 item
- medium onion may use dry onion flakes - 1 item
- water chestnuts and/or mushrooms optional - 1 item
How to make chicken enchiladas:
Sauce: Melt cheese in Ro-Tel. Add chicken and mushroom soup and onion.Remove chicken from bone and cut into small pieces. Wrap a small amount of chicken, water chestnuts, mushrooms and sauce in tortilla shells. Arrange enchiladas in large baking dish and pour the remaining sauce over them. Bake at 350° for 20 to 30 minutes or until hot.
