- flour - 1/4 c
- oil - 1/4 c
- chicken broth - 2 c
- grated Cheddar cheese - 2 c
- large onion, chopped - 1 item
- corn tortillas - 12 item
- chicken, cooked and chopped - 1 item
- chopped jalapeno - 1 item
How to make chicken enchiladas:
Soften tortillas in hot oil in skillet. Mix cheese, onion and chicken in bowl. Spoon onto tortillas; roll to enclose filling. Place in greased 9 x 13-inch baking dish. Blend chicken broth, flour and salt in saucepan. Cook until thick, stirring constantly. Add jalapeno peppers. Blend in sour cream. Pour over tortillas. Bake at 350° for 45 minutes or until bubbly.
