Chicken enchiladas
Ingredients/Components
- sour cream - 16 oz
- medium onion - 1 item
- Cheddar cheese, shredded - 1 c
- Monterey Jack cheese, shredded - 1 c
- large flour tortillas - 1 pkg
- salsa 1 large jar
- boneless chicken breasts, cut up in cubes - 4 item
How to make chicken enchiladas:
Cook chicken and onion until tender. Mix 1/2 cup of each cheese and sour cream together. Heat tortillas, one at a time, just enough to make them flexible. Dip heated tortilla in salsa, coating both sides. Place 1 tablespoon mixture in each tortilla. Add chicken and onion. Roll up and place seam side down in casserole dish. Pour remaining salsa and cheese over top. Bake at 350° for 20 to 30 minutes.Recipe categories: Chicken, Main dish, Poultry.
