  • sour cream - 16 oz
  • medium onion - 1 item
  • Cheddar cheese, shredded - 1 c
  • Monterey Jack cheese, shredded - 1 c
  • large flour tortillas - 1 pkg
  • salsa 1 large jar
  • boneless chicken breasts, cut up in cubes - 4 item

How to make chicken enchiladas:

Cook chicken and onion until tender. Mix 1/2 cup of each cheese and sour cream together. Heat tortillas, one at a time, just enough to make them flexible. Dip heated tortilla in salsa, coating both sides. Place 1 tablespoon mixture in each tortilla. Add chicken and onion. Roll up and place seam side down in casserole dish. Pour remaining salsa and cheese over top. Bake at 350° for 20 to 30 minutes.
