Ingredients/Components

  • soft shell tacos - 1 pkg
  • boneless chicken breasts - 3 item
  • onion, chopped - 1/2 item
  • green pepper, chopped - 1 item
  • cans cream of chicken soup - 2 item
  • oil - 1 Tbsp
  • water - 3/4 c
  • shredded Cheddar cheese - 1 pkg
  • sour cream and salsa for garnish - 1 item

How to make chicken enchiladas:

Cut chicken breasts into strips and saut?© chicken, onion and green pepper in oil until chicken is fully cooked. Pour in soup and 3/4 cup of water. Simmer for about 5 minutes. Fill soft taco shells with mixture and roll them up. Place enchiladas in a baking dish and cover with shredded cheese. Bake at 350° until cheese is fully melted. Serve with garnish (sour cream and salsa).
