  • Velveeta cheese - 2 lb
  • medium onion - 1 item
  • salt and pepper - 1 item
  • medium onions - 2 item
  • corn tortillas - 1 pkg
  • small carton sour cream - 1 item
  • to 5 stalks celery - 4 item
  • dash of cumin - 1 item
  • oleo or margarine - 2 Tbsp
  • pods garlic - 2 item
  • chopped chives or green onion - 2 Tbsp
  • fryer whole - 1 (2
  • Sauce:2 cans Ro-Tel
  • few chopped mild green chilies - 1 item

How to make chicken enchiladas:

Sauce:2 cans Ro-Tel2 lb. Velveeta cheese1 medium onion2 Tbsp. oleo or margarine few chopped mild green chilies Boil chicken in a covered pot with the garlic and cumin until done. Remove chicken from the bone. Add to chicken 1 small carton of sour cream and 2 tablespoons chopped chives or green onion tops. Keep chicken moist with some of the broth; set aside.

Cheese Sauce: Saute onion in oleo and add Ro-Tel, Velveeta cheese and chilies. Get corn tortillas, heat in oil, then put chicken mixture in the tortillas. Roll and put in baking dish. After you use all the chicken, pour cheese sauce over enchiladas and brown in oven at 350°.
