Chicken enchiladas
Ingredients/Components
- medium onion, chopped - 1 item
- cooked chicken, cubed
- cans cream of chicken soup - 2 3/4
- sharp Cheddar cheese, grated - 1 lb
- can diced green chilies - 1 oz
- frozen corn tortillas, thawed - 12 item
How to make chicken enchiladas:
Mix together the chicken, onion, green chilies and soup. Soak the thawed tortillas in hot water for 3 minutes; drain. In a greased 9 x 13-inch baking dish, place 6 tortillas. Pour 1/2 the chicken mixture over the tortillas; sprinkle 1/2 of the cheese. Repeat layers. Bake at 350° for 30 to 40 minutes.Recipe categories: Chicken, Main dish, Poultry.
