  • medium onion - 1 item
  • salt and pepper - 1 item
  • chopped tomatoes - 2 c
  • grated Monterey Jack cheese - 1 lb
  • flour tortillas - 12 item
  • cubes chicken bouillon - 4 item
  • chopped chicken - 2 c
  • can chilies, drained - 1 oz

How to make chicken enchiladas:

Soften tortillas and add filling. Dissolve bouillon cubes in 1/2 cup boiling water. Add half and half and pour over dish. Add cheese. Bake at 350° for 45 minutes.
