  • pkg - 2 oz
  • stick butter - 1/2 item
  • chopped onion - 1 item
  • bay leaf - 1 item
  • Monterey Jack cheese, shredded - 2 c
  • flour tortillas - 1 item
  • cans chopped green chilies - 2 oz
  • to 4 chicken breasts - 2 item
  • cartons whipping cream 2 small - 2 item

How to make chicken enchiladas:

Boil chicken breasts with bay leaf. Combine onion and green chiles with butter. Saut? until onion is cooked (I microwave 10 minutes, stirring every 2 minutes). Mix cream cheese with onion mixture. Combine well. Mix finely chopped chicken. Put about 3 tablespoons of this mixture in a flour tortilla. Roll and place seam side down in pan (9 x 13). Cover with Monterey Jack cheese. Pour whipping cream over all. Bake at 350° for 35 to 40 minutes. This should make 12 tortillas.

Most of the time I can get a small casserole of 6 tortillas. Add 1 cup of cheese and 1 small carton of whipping cream.
