- chicken broth - 1 item
- cheese - 4 c
- onion, diced - 1 item
- whole chicken - 1 item
- regular cans enchilada sauce - 4 item
- bag corn tortillas 30 count - 1 item
How to make chicken enchiladas:
Boil whole chicken until it's falling apart. Remove skin and bone from chicken. In a large bowl, mix shredded chicken, 2 cans of enchilada sauce, diced onion and 2 cups of cheese. Pour a small amount of chicken broth in the bottom of 2 casserole dishes. Roll chicken mixture in tortillas. Pour the remaining 2 cans of enchilada sauce over the rolled enchiladas and spread the remaining cheese over the top.
