Ingredients/Components

  • sour cream - 8 oz
  • can cream of chicken soup - 1 item
  • can chicken - 1 chicken
  • can green chilies - 1 item
  • chopped green onions - 1/4 c
  • corn tortillas - 1 pkg
  • Cheddar cheese or Co-Jack cheese - 8 oz

How to make chicken enchiladas:

Soften tortillas in microwave (slit package and cook 30 seconds on High).

Mix filling (sour cream, chilies, onions, soup and cut up chicken). Spread a thin layer of mixture in a 9 x 9-inch pan. Fill softened tortillas with mixture. Roll tightly; secure with toothpick. Top with any remaining mixture and cheese. Bake at 325° for 30 minutes.

Note: If glass pan is used, can be microwaved for 5 to 7 minutes instead of baking. I usually microwave 5 minutes and stick under broiler for 1 to 2 minutes.
