Chicken enchilada casserole



  • chopped onion - 1/2 c
  • can evaporated milk - 1 oz
  • cans cream of mushroom soup - 2 item
  • cut up stewed chicken - 3 4
  • small can Ortega brand chili pepper not hot - 1 item
  • corn tortillas not flour, broken in pieces - 1 doz
  • grated cheese Cheddar, Swiss, Monterey Jack - 6 8

How to make chicken enchilada casserole:

Mix first five ingredients. Layer tortillas, chicken mixture and cheese. Repeat with cheese on top. Bake at 350° for 20 minutes.
