Ingredients/Components
- chopped onion - 1/2 c
- can evaporated milk - 1 oz
- cans cream of mushroom soup - 2 item
- cut up stewed chicken - 3 4
- small can Ortega brand chili pepper not hot - 1 item
- corn tortillas not flour, broken in pieces - 1 doz
- grated cheese Cheddar, Swiss, Monterey Jack - 6 8
How to make chicken enchilada casserole:
Mix first five ingredients. Layer tortillas, chicken mixture and cheese. Repeat with cheese on top. Bake at 350° for 20 minutes.Recipe categories: Chicken, Main dish, Casseroles.
