Ingredients/Components
- chopped onion - 1 item
- can cream of chicken soup - 1 item
- can Ro-Tel tomatoes - 1 item
- salt and pepper to taste - 1 item
- can cream of mushroom soup - 1 item
- Cheddar cheese - 2 c
- flour tortillas - 1 pkg
- large chicken, cooked - 1 item
How to make chicken enchilada casserole:
In a buttered casserole, layer tortillas that have been cut in strips. Place layer of chicken that has been deboned and seasoned. Mix soups, Ro-Tel tomatoes and onions and pour over chicken. Top with cheese and bake at 350° for 30 to 40 minutes, until hot and bubbly. This recipe may be doubled for a large crowd.
