Ingredients/Components

  • cream or milk - 2 c
  • fat - 1/3 c
  • flour - 1/2 c
  • salt
  • pepper - 1/2 tsp
  • celery salt - 1 tsp
  • cooked, chopped chicken
  • onion juice - 1 tsp
  • lemon juice - 2 tsp
  • parsley - 1 tsp
  • egg, beaten - 1 item
  • bread crumbs - 1 c

How to make chicken croquettes:

Blend cream, fat, salt, pepper and celery salt to make white sauce. Combine chicken, onion juice, lemon juice and parsley. Add to sauce. Cool; shape into balls or cones. Dip in egg. Roll in crumbs. Fry in deep fat until well browned. Serve with green peas.

Mixture may be placed in a casserole dish and covered with crumbs, if desired. Bake at 375° for 30 minutes or until top is brown. Makes 4 servings.
