Ingredients/Components
- cream or milk - 2 c
- fat - 1/3 c
- flour - 1/2 c
- salt
- pepper - 1/2 tsp
- celery salt - 1 tsp
- cooked, chopped chicken
- onion juice - 1 tsp
- lemon juice - 2 tsp
- parsley - 1 tsp
- egg, beaten - 1 item
- bread crumbs - 1 c
How to make chicken croquettes:
Blend cream, fat, salt, pepper and celery salt to make white sauce. Combine chicken, onion juice, lemon juice and parsley. Add to sauce. Cool; shape into balls or cones. Dip in egg. Roll in crumbs. Fry in deep fat until well browned. Serve with green peas.Mixture may be placed in a casserole dish and covered with crumbs, if desired. Bake at 375° for 30 minutes or until top is brown. Makes 4 servings.
