Ingredients/Components
- salt
- flour - 3/4 c
- paprika - 2 tsp
- pepper - 1/4 tsp
- chopped onion - 1/2 c
- chopped celery - 1 c
- chicken broth - 1 c
- chopped green pepper - 1/3 c
- parsley - 2 Tbsp
- rice - 1 c
- poultry seasoning - 1/2 tsp
- clove garlic, chopped - 1 item
- canned tomatoes - 2 c
- chicken breasts, boned - 6 item
- pepper and dash of hot sauce - 1/4 tsp
How to make chicken creole:
Heat oven to 400°. Spray a large baking pan with oil. Put flour, salt, pepper, paprika and poultry seasoning in plastic bag. Shake chicken, 3 pieces at a time. Put in pan. Bake 25 to 30 minutes. Remove chicken from pan. Add rice and vegetables to pan. Put chicken on top of rice mix. Bring to a boil the chicken broth, tomatoes and rest of seasoning (hot sauce to taste). Pour over chicken and rice, covering both. Bake, uncovered, 40 to 50 minutes. Add more liquid (water) to prevent dryness.Recipe categories: Chicken, Main dish, Chicken breast.
