Chicken cordon bleu



  • salt - 3/4 tsp
  • flour - 1/4 c
  • egg, slightly beaten - 1 item
  • water - 2 Tbsp
  • oil - 2 Tbsp
  • pepper - 1/4 tsp
  • Swiss cheese slices - 4 item
  • large chicken breasts - 2 item
  • dry Italian bread crumbs - 1/2 c
  • thin slices cooked ham - 4 item

How to make chicken cordon bleu:

If chicken is not boneless, remove bones and skin. Then cut chicken breasts into halves. Place chicken between 2 pieces of waxed paper. Pound with meat mallet or hammer until 1/4-inch thick. Place one slice of ham and cheese on each piece of chicken. Roll up carefully, beginning at narrow end. Secure with wooden toothpick.

Mix flour, salt and pepper. Coat rolls with flour mixture, dip in egg and recoat with bread crumbs. Cook in hot oil until light brown. Turn 5 to 10 minutes. Add water. Cover and simmer about 10 minutes until done.
