Chicken confetti
Ingredients/Components
- salt - 1 tsp
- salad oil - 1/4 c
- pepper - 1/8 tsp
- clove garlic, minced - 1 item
- chopped onion - 1/2 c
- basil - 1 tsp
- parsley - 2 tbsp
- spaghetti, cooked and drained - 7 8
- each - 2 cans
- grated parmesan cheese - 1 item
- broiler fryer chicken, cut up - 4 5
How to make chicken confetti:
Wash chicken, pat dry. Season with 1 tsp. salt, 1/8 tsp. pepper.In a large skillet or Dutch oven, brown chicken. Pour off all but 3 tbsp. fat. Add onion and garlic, cook and stir until onion is tender. Stir in chicken and remaining ingredients except spaghetti and cheese. Stir in spaghetti and cheese.
Cover tightly; cook chicken slowly 1 or 1 1/2 hours, or until tender, stirring occasionally and adding water if necessary. Skim off excess fat. Serve on spaghetti; sprinkle with Parmesan cheese. 4 to 6 servings.
