Ingredients/Components

  • salt - 1/2 tsp
  • cornstarch - 3 Tbsp
  • cold water - 1/2 c
  • vegetable oil - 1 Tbsp
  • can chow mein noodles - 1 1/2
  • ground ginger - 1/2 tsp
  • garlic powder - 1/8 tsp
  • sliced green onions - 1/2 c
  • soy sauce - 1 Tbsp
  • chopped green pepper
  • can water chestnuts, drained and sliced - 1 oz
  • chopped, cooked chicken
  • hot chicken broth
  • diagonally sliced celery - 3 c
  • cans mushrooms, drained - 2 oz

How to make chicken chow mein:

Heat vegetable oil in a deep, heavy cooking pot. Add celery and onion; stir-fry over moderate heat until onion is transparent, but not brown. Add chicken broth; cover and cook over low heat 4 to 5 minutes.

Meanwhile, combine cornstarch, salt, garlic, ginger, cold water and soy sauce; mix until smooth. Add slowly to hot mixture, stirring constantly. Stir and cook over medium heat until liquid thickens and is clear. Add chicken, green pepper, mushrooms and water chestnuts. Mix well. Cover and cook over low heat, about 5 minutes, until heated through.

To serve, turn into a 2-quart serving dish. Scatter noodles on top of chicken mixture. Yields 6 cups.
