Chicken casserole
Ingredients/Components
- stick butter - 1/2 item
- chopped onion - 1/2 c
- chicken broth - 2 c
- Dukes mayonnaise - 1/2 c
- eggs, hard-boiled and finely chopped - 4 item
- chopped and cooked - 4 chicken
- + 1 c - 2 c
How to make chicken casserole:
Rinse chicken under cool water. Place in large pot and fill with water about 1 inch over top of chicken. Add 1/2 stick of butter and cook for about 1 hour. (Test: Chicken should fall easily off bone.) Chop or shred chicken. Save 2 cups of the chicken broth. Boil eggs for 10 minutes. Remove shells. Chop into fine pieces. Preheat oven to 350°. Chop, prepare and measure remaining ingredients.Combine chicken, mayonnaise, chicken broth, onion, eggs and 2 cups stuffing mix into large bowl. Using fingers, mix well.
Pour mixture into a 9 x 13-inch baking dish. Top with remaining 1 cup of stuffing mix. Bake at 350° for 30 minutes. Serve with salad and rolls, or as a side dish. Yields 6 servings.
