Chicken cashew
Ingredients/Components
- chicken breast 2 halves - 1 item
- pea pods - 1/4 lb
- green onions - 2 item
- can water chestnuts - 1/2 oz
- mushrooms - 1/4 lb
- chicken broth or bouillon - 3/4 c
- cornstarch
- soy sauce - 3 Tbsp
- sugar - 3/8 tsp
- pepper - 1 item
- cashews - 1/2 c
How to make chicken cashew:
Cut chicken in bite-size pieces. Rinse pea pods; remove tips and strings. Cut onion tops in 1-inch lengths and thin slice white portions. Slice water chestnuts; quickly rinse mushrooms and blot dry. (Do not slice until ready to cook.) Arrange all on tray, cover with plastic wrap and refrigerate.Combine soy sauce, cornstarch, sugar and pepper in small cup. Measure chicken broth; open cashews.
At cooking time: Slice mushrooms. Cook chicken until opaque. Stir in peas, onion, mushrooms and broth. Cover. Cook for 2 minutes. Add chestnuts and soy mixture, well stirred before adding. Cook, uncovered, stirring twice until thickened. Add cashews and serve over hot rice.
