  • salt - 1 tsp
  • vegetable oil - 1/3 c
  • all-purpose flour - 1/4 c
  • pepper - 1/8 tsp
  • bay leaf - 1 item
  • can tomato sauce - 8 oz
  • celery seed - 1/2 tsp
  • sliced onion - 1 c
  • can tomatoes with liquid - 14 oz
  • garlic to taste - 1 item
  • dried sage - 1/4 tsp
  • broiler fryers, quartered - 2 (2

How to make chicken cacciatore:

Combine flour with salt and pepper. Dredge chicken in mix. Saute in oil 4 to 5 minutes each side until brown. Remove to plate. Saute onion 5 minutes until golden. Drain excess oil. Add tomatoes, tomato sauce, garlic, bay leaf, celery seed, sage and chicken. Simmer, covered, 1 hour, stirring occasionally. Remove bay leaf. Uncover and cook 30 minutes longer, until sauce is thick.
