Ingredients/Components
- can stewed tomatoes - 1 14
- olive oil - 1 Tbsp
- jar marinated artichoke hearts - 1 6
- Feta cheese, crumbled - 1/2 c
- boneless, skinless chicken breast cut in cubes - 1 lb
- onion cut in chunks - 1 item
How to make chicken athena:
In a skillet brown chicken in oil, add onion and cook 2 minutes. Stir in tomatoes and marinade from artichokes. Cook over medium heat 10 - 15 minutes or until thickened a bit, stirring frequently. Stir in artichoke hearts. Heat through. Top with Feta cheese. Serve over rice.Preparation time - 5 minutes.
Cooking time - about 20 minutes.
