Ingredients/Components

  • salt - 1/2 tsp
  • water - 1/4 c
  • lemon juice - 1/3 Tbsp
  • walnuts, chopped - 1/2 c
  • pepper - 1/2 tsp
  • chopped celery - 1 c
  • can cream of chicken soup - 1 oz
  • mayonnaise - 3/4 c
  • medium onion, chopped fine - 1 item
  • cooked rice
  • diced cooked chicken - 1 c
  • hard-boiled eggs, sliced - 3 item
  • crushed potato chips - 2 c

How to make chicken and rice casserole:

Combine ingredients. Mix mayonnaise and water; add to chicken mixture. Gently stir in eggs. Place in buttered casserole. Top with crushed potato chips. Bake in a 350° oven for 30 to 40 minutes. Serves 8.
