Ingredients/Components

  • salt - 1 tsp
  • butter - 1 Tbsp
  • chicken broth - 2 c
  • parsley - 1 Tbsp
  • Minute rice - 2 c
  • onions, chopped - 1/2 c
  • black pepper - 1 tsp
  • cloves garlic, chopped - 4 item
  • celery, chopped - 1 c
  • whole chicken - 3 lb
  • can tomatoes - 16 oz
  • green bell pepper - 1 c

How to make chicken and rice casserole:

Cook chicken until tender. Remove from bones. Set aside. Use two cups of chicken broth. Cook rice in broth. Combine all other ingredients in a saucepan; cook until tender.

Combine chicken, rice and all other ingredients. Put in a large casserole dish. Cover well. Place in oven at 350°. Bake 35 minutes. Remove from oven. Cool 15 minutes before serving.
