Chicken and mushrooms
Ingredients/Components
- butter - 1 Tbsp
- salt and pepper to taste - 1 item
- olive oil - 6 Tbsp
- sliced mushrooms - 1 lb
- cloves minced garlic - 2 item
- sliced onion - 1 item
- sherry - 1/2 c
- tarragon - 1/2 tsp
- whole chicken or chicken parts - 1 3lb
- crushed basil or freshly chopped - 1/4 tsp
How to make chicken and mushrooms:
Cut chicken into serving pieces if it is a whole chicken. Wash and pat dry. Season with salt and pepper. In a skillet heat butter, garlic and 2/3 of olive oil. Brown chicken on both sides (about 10 minutes). Lower the heat add the herbs and continue cooking on low for about 20 minutes. In a seperate skillet heat 2 Tbsp. oil and saute onion until clear and add mushrooms and 2 Tbsp. water. Simmer 8-10 minutes and add to chicken. Cover and simmer chicken for about 15 minutes. Pour in sherry and turn up heat, boil for 1 minute. Serve hot.Recipe categories: Chicken, Main dish, Poultry.
